Ingredients
For the Chicken & Potatoes:
- 1.5 lbs chicken breasts (or thighs)
- 1.5 lbs baby potatoes, halved
- 4 cloves garlic, minced
- ½ cup Parmesan cheese, grated
- 4 tbsp butter, melted
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp dried oregano
- Salt & black pepper (to taste)
For Garnish (Optional):
- Fresh parsley, chopped
- Extra Parmesan cheese
Instructions

Preheat the Oven – Set to 400°F (200°C) and line a baking sheet with parchment paper.

Prepare the Ingredients – Cut baby potatoes in half, pat chicken dry, and mince garlic.

Make the Seasoning Mix – In a bowl, whisk together butter, olive oil, garlic, paprika, oregano, salt, and pepper.

Coat the Potatoes and Chicken – Toss potatoes in half of the seasoning mixture and spread them on the baking sheet. Coat chicken in the remaining mixture and place beside the potatoes.
