Preheat Oven – Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

Prepare the Rice – In the baking dish, mix rice, chicken broth, chopped onion, garlic, butter, salt, and pepper. Spread the mixture evenly.

Season the Chicken – Pat the chicken dry. In a small bowl, mix paprika, thyme, garlic powder, salt, and black pepper. Rub the chicken with olive oil and coat it evenly with the seasoning mix.

Assemble – Arrange the seasoned chicken pieces skin-side up on top of the rice mixture.

Bake Covered – Cover the dish with foil and bake for 30 minutes.

Bake Uncovered – Remove the foil and continue baking for another 20-25 minutes, or until the chicken is golden brown and the rice is fully cooked.

Rest & Serve – Let the dish rest for 5 minutes before serving. Garnish with fresh parsley or a squeeze of lemon juice for extra brightness.

- Chicken Alternatives: You can use boneless, skinless chicken, but reduce the cooking time by about 10 minutes.
